What to grow for January 2023

The bleak month of January is not as dormant as some might assume. The horticulturalist mind is already racing with ideas for the growing season that within weeks shall be knocking on doors. The huge array of veg to choose from includes decisions on desired harvest time. Potatoes are a simple example, early/mid/late harvests all depend on planting times and varieties. Likewise most veg have alternatives to their varieties. Though not a huge variety of veg juts yet, there are items that can be started indoors in unheated environments or cold frames such as the following:
